What a great idea. With my great respect for Rav Adin and fond memories of our work together in the FSU I'd love to contribute. Since starting Daf Yomi in 2012 I've been keeping a journal of sugyot that interested me. I'll try to choose a few that I think might belong in your anthology.

Brachot 8a מיום שחרב בית המקדש....
Brachot 8b. לוחות ושברי לוחות מונחות בארון
Brachot 25b. לעולם אימא לך תפלות אבות תקנום, ואסמכינהו רבנן אקרבנות.
Brachot 29b. ... כל שאינו יכול לחדש בה דבר...

Shabbat 31. The stories about Hillel and Shammai. זיל גמור
Shabbat 63 a. אין מקרא יוצא מידי פשוטו
Shabbat 75a. A sugya on what we can learn from the Persians. Permissible, even obligatory assimilation.
Shabbat 88 and 89 a and b. Amazing agada. Including נעשה ונשמע vs. הר כגיגית
Shabbat 104a. מאי טעמא שקר מקרבן מיליה, אמת מרחקא מיליה?

That's a sample from two tractates. I'm rushed today, but if you want more, I can probably find time in December.
